Parmesan Rind

You know that hard, yucky part of a block or parmesan also called the rind? Did you know that you can use it!?!? Save it in a freezer safe bag in the freezer until you are ready to throw it into a pot of Minestrone or Vegetable soup. Drop it in at the same time you throw in the herbs (aka your bay leaf). If there is any left, remove it when your soup is done!

How easy is that?
